Pinned it Tuesday: homemade pickles

Homemade pickles are honestly so easy to make that even I can’t screw them up!  (And if you’re one of those people rolling your eyes at me and thinking “yeah right”, I’m serious!)

Thinly slice your veggies and place them in a mason jar with peppercorns and sprigs of dill.  In a separate bowl, mix 1 cup water, 1 cup white vinegar, 2 teaspoons salt, and 1 tablespoon sugar.  Stir to dissolve and pour over veggies.  Refrigerate overnight.

I stuck with cucumbers however the original recipe said that you can pickle just about anything (recommending in particular root veggies like carrots or radishes).  Also, I only made this batch a few days ago but apparently they can last for up to a month.  Not that pickles ever last that long in my fridge.  Enjoy!
