Pinned it Tuesday: simple oreo ice cream cake

What can I say?  I’m on a baking roll.  First these cookies, and then I made the Chef an ice cream cake for his birthday.  And both were actually edible!

Although I learned the hard way not to deviate from a recipe when trying it for the first time, I did cut these ingredients by about 50% and instead used a round pie dish.

Simple Oreo Ice Cream Cake

  • 30 oreo cookies, crushed (plus more if you’d like to sprinkle some on top)
  • 1/2 c melted butter
  • 1/2 gallon ice cream (any flavor), slightly softened
  • 1 jar hot fudge sauce
  • 2 – 8 oz. containers cool whip, softened

Directions: Mix melted butter & oreos.  Press into a 9×13 inch pan. Soften fudge in microwave.  Smooth softened ice cream over cookie mixture.  Smooth fudge sauce over ice cream.  Spread cool whip over the ice cream.  Sprinkle with additional crushed oreos.  Freeze at least 2 hours.  Keep frozen until 15 minutes before serving.

I’m slightly embarrassed to admit how accurate this is but after celebrating the Chef’s birthday for the past five days/nights. I’m exhausted.

My brother and the Chef both shaved their heads for childhood cancer research earlier today.  As I mentioned to friends on Facebook, skip that last Sunday Funday beer and donate $5 to St. Baldrick’s Foundation instead!

“But she loves Buffalo…”

Out with friends last night, the following inquiry happened:

Him: “Is your friend Kate single?”

Friend: “Nah, she’s dating someone.”

Him: “But she loves Buffalo…”

Pinned it Tuesday: boyfriend cookies

I figured two things would probably be true with these cookies: first, the Chef would love them; and second, he would die of shock that I actually baked/cooked/prepared something for him.  But after my bake sale success (my pb cub cookies won first place in the cookie category!), I was feeling pretty confident.

Boyfriend Cookies 

  • 1 cup butter, softened
  • 3/4 cup packed brown sugar
  • 1/4 cup white sugar
  • 1 (3.5 ounce) package instant vanilla pudding mix
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 2 cups chocolate chips (1 cup milk choc & 1 cup semisweet)
  • 1/2 cup white chocolate chips
  • 1/2 cup peanut butter chips
  • 1/2 cup M&M’s
  • 1/2 cup Reese’s Pieces

Directions: Preheat oven to 375 degrees. In a mixing bowl, cream butter and sugars. Add pudding mix, eggs and vanilla. Combine flour and baking soda; add to creamed mixture and mix well. Fold in chocolate chips and remaining candy.  Drop by tablespoonfuls onto ungreased baking sheets. I usually use a small spring-loaded cookie scoop. Bake for 10-12 minutes or until lightly browned.  Cool on wire racks.

For my brother’s girlfriend’s birthday, I met up with them and their friends today at Central Park for some daytime drinking.  Honestly, who doesn’t drink in Central Park?  Just behave yourself.  And use an Avengers cup.
